Roasted Stone Fruit with Honey
Warm, caramelised fruit that turns a box of cherries into dessert.

- 500 g stone fruit or cherries
- 2 tablespoons honey
- Half a lime
- Yoghurt or crème fraîche, to serve
- 01Halve and stone the fruit and place cut-side up in a baking dish.
- 02Drizzle with honey and a squeeze of lime.
- 03Roast at 180°C until the edges caramelise and the juices run — about twenty minutes for cherries.
- 04Serve warm, spooned over cold yoghurt. The contrast is the point.
Roasting concentrates the fruit’s sweetness and loosens its structure until it is almost jammy. The edges caramelise, the juices run, and a box of cherries quietly becomes dessert.

Warm fruit over cold yoghurt is one of the simplest luxuries of stone fruit season. A little lime stops it from ever being cloying.
