Mango & Lime Salad
Ten minutes, four ingredients, and the taste of peak summer.

Ingredients
- 2 ripe mangoes
- 1 lime
- A handful of mint
- A pinch of salt
- A little green chilli, finely chopped
- 01Cube the mangoes into bite-size pieces.
- 02Squeeze over the juice of half the lime and stir.
- 03Tear in the mint and add the chilli.
- 04Season with salt, taste, and add more lime if needed.
- 05Let it sit for five minutes so the lime wakes the mango up, then serve chilled.
The simplest possible argument for buying mangoes at their peak. Four ingredients, ten minutes, and a bowl that tastes like the season wrote it.
Serving ideas
Serve it over thick yoghurt for breakfast, beside grilled fish for dinner, or entirely on its own with the mint doing the talking.
