How to tell when a mango is actually ripe.
Ignore the colour. A ripe Alphonso gives slightly at the stem, smells intensely of mango, and feels heavy for its size. Hard mangoes ripen at home on the counter in a day or two.
Store ripe fruit in the fridge and eat within three days. Cold dulls the aroma, so let it sit out for twenty minutes before cutting — the difference is real.
